Costa Esmeraldas
Single estate. Less than 10 miles inland from the town of Muisne in the Esmeraldas province. Cacao orchards were established six years ago on former cattle pasture with very steep terrain. Establishment of cacao, timber, and other fruit trees has reduced erosion on the farm site. 
Costa Esmeraldas is a family owned and operated 100-hectare cacao farm. All members of the Salazar family (Fredy, Monica, and siblings Freddy and Indira) actively participate in the cacao business. Management of the cacao orchards create over 40 full-time jobs within the local community in rural Esmeraldas.
Caco flavor: Strong base chocolate, roasted nuts, light fruit and floral notes. Low acidity and very low bitterness and astringency.
Dominican Republic- Zorzal Cacao
Zorzal Cacao believes great things come from chocolate. From our 1,019 acre bird sanctuary in the northern mountains of the Dominican Republic, we produce fine flavored, organic cacao while creating conservation solutions across hemispheres. 
Seventy percent of the land on our bird sanctuary, Reserva Zorzal, is set aside to be forever wild. On the rest, we grow cacao, macadamia, bananas, and other food using sustainable farming practices based on an agroforestry system. Our signature bird species, Bicknell’s Thrush, winters here on the reserve and breeds in the northeastern U.S. and nearby Canada.

As the Dominican Republic’s first private preserve, we’re a model for other landowners working towards landscape-level conservation and greater access to global markets.
On our 130-acre organic demonstration farm in the Dominican Republic, we blend research and experience with our passion for cacao and sustainable development. By selecting fine flavored grafted varietals that improve quality and quantity per acre, we increase farmer income.

d’Ébène Chocolat is made in studio from single-origin, individually-sourced, fair trade cacao beans. ​Whether you eat d’Ébène Chocolat plain or use it in your favorite cookie, brownie, cupcake or other confections, candies, each one of our chocolates is an exciting adventure–a distinctive and unique culinary experience.

We import cacao beans from Peru, Ecuador, the Dominican Republic, Venezuela and other exotic countries. We process ​these beans in studio for up to 96 hours; using a conching process, which refines the chocolate and makes it smooth and creamy. The result of this dedication is a tantalizing harmony of flavors and textures, unique among the chocolates and pastries of the world.
